hi, this here.. is bacon jam! and will show you how to make it in this episode of bbq aus rheinhessen enjoy the show! the idea for this bacon jam comes from a book i just bought... 50 shades of bacon :) and now.. letâ´s take a look on the ingredients. we start with 750 gr of bacon...


3 gloves of garlic 7 red onion, 1 cup brown sugar, balsamic vinegar, maple sirup and smoked paprika powder a castiron pan, a sieve and a bowl to collect the bacon fat now start by cutting the bacon in 2cm chunks cut the onions and garlic and then we start with a cold pan... onions and garlic are chopped...


no need for perfection there because everything will be blended.. now i cut the bacon in 2cm chunks it will fall into itâ´s slices ok..here is a mountain of bacon :) now turn on the heat and set it to medium/high a 7/10 the pan has to warm up slowly


now add the bacon to the cold pan and let it cook slowly now let the bacon cook for 20 minutes on medium temperature... let the fat melt slowly and then we continue after about 15 minutes the fat starts melting...which you can hear... the typical sound of baking bacon how would oscar-meyer say? this moment..when magic happends


now keep stiring.. as the bacon looses some fat we are on our way... it smells so awesome in my kitchen now cook for another 10 minutes if the bacon looks and cooks like this.. itâ´s almost done... always use gloves when you grap a hot cast iron pan... now fill the bacon in the sieve there is lots of bacon grease :)


donâ´t throw it away.. you might use it later on itâ´s amazing what you can produce with it! donâ´t throw it away !! now put the bacon aside the pan is still hot now add 2 tablespoons of bacon fat now add the onion and garlic set the heat on 6/10 the onions shall only get soft


after 6-10 minutes... now add 1/2 cup of balsamic vinegar a half cup maple sirup then add 1 cup of brown sugar and a teaspon just to add a little smoke flavour now let it heat up


keep stiring with a wooden spoon and now add our bacon now reduce the heat to a 3/10 as the pan is still hot..it will keep warm for a long time let it cook slowly and on low temperatur let it reduce and become a nice marmelade i think i could add some fresh thyme


just add a few leafes after 30 minutes... the bacon jam is almost done... it smells so wonderfull! now fill the jam in a blender.. and pulse it so it gets a nice contency always wear gloves fillt the jam in the blender this is how it looks like when your are done nice bits of bacon.. but really smooth now fill it in jars and take a look.


4 little jars of delicous bacon jam i just tasted it... and guys... its unbelieveable awesome! just imagine making a burger with this jam and some dry aged beef... omg !!! its so easy to make.. and you should give it a try! have fun trying it.. see you next time .. .here on bbq aus rheinhessen.
